This book is the first volume in a series addressing Claus Henriksen’s approach to his food craft and use of local and sustainable produce in his kitchen throughout the year. We will visit some of the growers who supply produce to Restaurant MOTA, illustrating and describing the cultivation, harvesting, and processing involved. In short, we wish to paint a picture of Odsherred’s gastronomic culture, at present expanding with new innovative producers and the respect for local produce sublimely mastered by Claus Henriksen. The book includes recipes and tips on innovative ways to use and prepare fresh seasonal produce to tickle your palate. All of it available from both nature and growers in Geopark Odsherred.
